Spain has more than 300 Michelin‑starred restaurants
11 February, 2026The Michelin Guide Spain & Andorra 2026 confirms the excellent moment that Spanish gastronomy is experiencing, with a total of 307 award‑winning restaurants, after incorporating 30 new additions. The balance reflects not only stability in the culinary elite but also a remarkable capacity for renewal and growth of talent, with well-established establishments and new proposals that raise the level of the gastronomic scene throughout the country.
At the very top, the 16 restaurants with three Michelin Stars have renewed their distinction, maintaining a standard of excellence recognised at international level. The two-Star segment adds up to 37 establishments, five of them new additions, while the one-Star category reaches 254 restaurants, with 25 new entries.
Barcelona, Madrid and other major cities take part of the spotlight, but the selection confirms that haute cuisine also extends to small towns, where unique projects have managed to turn their identity and surroundings into a distinctive value.
The 2026 edition also highlights a clear return to roots cuisine, with reinterpretations of traditional recipes, the use of local produce and respect for the seasons. Alongside this, there is a growing number of proposals that combine local identity with international influences. The convergence between gastronomy and hospitality, with restaurants located in hotels distinguished with Michelin Keys, reinforces the role of cuisine as a key driver of Spain’s tourist and cultural appeal.
