Madrid Fusion 2025: a tribute to chefs from the ‘90s and a welcome to AI

The Madrid Fusión 2025 fair, the great showcase for Spanish gastronomy, chefs, processes and products, was held in Madrid at the end of January with a tribute to the great chefs of the 90s and a look at the challenges of Artificial Intelligence (AI).

Over the course of three days, 27, 28 and 29 January, chefs, pastry chefs, cocktail makers, oenologists and sommeliers from Spain and the rest of the world reflected on the current state of avant-garde cuisine, new trends and the processes of change in haute cuisine.

In total, over 250 speakers of over 25 nationalities gathered at the fair to discuss new gastronomy and the production, preparation and consumption of food in six different areas and to recover flavours and culinary traditions.

This year’s edition paid tribute to the great chefs who astonished the world 30 years ago with their avant-garde cuisine, their creative freedom and their daring, such as Ferran Adrià, Martín Berasategui, Juan Mari Arzak, Pedro Subijana, Andoni Luis Aduriz, Dani García, Quique Dacosta, Joan Roca and Carme Ruscalleda.
